Tasting Notes
This wine showcases a lively and refreshing effervescence. Its bright, pale greenish-yellow hue is captivating. The aroma is both intense and intricate, featuring notes of green apple and peach, enhanced by a hint of fennel. On the palate, it delivers a creamy, balanced, and well-structured experience, revealing flavors of dried fruits, eucalyptus, and citrus zest. The finish is long-lasting and memorable.
Vineyard Notes
Situated at elevations between 100 and 150 meters above sea level in the San Vicente Valley, the grapes thrive in a mix of clay and sandy soils, ripening beautifully in well-balanced vineyards. The moderate yields per hectare lead to wines that exhibit a concentrated character and a complex aromatic profile.
Production Notes
Pet-Nats are a type of sparkling wine that completes its fermentation inside the bottle. Utilizing the Ancestral Method, also known as "Col Fondo," Pet Nats are usually lively, refreshing, slightly yeasty, and perfectly balanced in their effervescence.
The grapes are carefully selected, destemmed, and gently pressed. The must is racked at a low temperature, and once clarified, it ferments with indigenous yeasts in stainless steel tanks under controlled temperatures. Before fermentation is complete, the wine is bottled so that carbonation develops naturally inside the bottle.

Infused with freshness, these wines are ideally savored when young and served chilled. They complement salads, charcuterie, and seafood beautifully. If you're considering pairing them with Champagne or a dry white, a pét-nat will likely be a great match too. Don't hesitate to get inventive!
